Thursday rainy day muffin and green bean mush.









I had some old apples i wanted to use up.








Crumble Muffins are great for rainy days








Apple Crumb Muffins


Recipe ( makes 12 )


120g butter, 165g caster sugar
2 eggs, 140ml double cream
250g plain flour 2 teaspoon baking powder 1teaspoon baking soda
1 teaspoon cinnamon 1/4 teaspoon salt 
200g apples peeled and cubed ( i used pink lady )


Preheat oven at 175c.


1. Beat butter and sugar until creamy. Whisk in eggs.
2. whisk in double cream
3. Fold in sifted flour, baking soda, baking powder, cinnamon, salt. 
4. Fold in chopped apples. Spoon batter into muffin tins.


Bake muffins for about 20-25 minutes. Until golden brown. 


To make the crumble :


100g flour 80g butter 80g sugar


Mix flour and sugar, rube in cubed butter until mixture resembles bread crumbs.

green been paste didn't really work. It went grey! No green bean cake now. Maybe red bean.

Oops! forgot to add that in. I edited the recipe. Temperature and cooking time is in there now. :D

hi! sorry for this silly question - but should the crumble be added on top of batter and bake together, or should they be added only after muffins come out of oven? thanks!
ps. i tried the vanilla cookies ytd, thank u!

Don't worry, its a perfectly legitimate question. I'm not very good with writing recipes, sometimes I miss out steps!

Anyway, add crumble before baking, always make the crumble first and put it in the fridge before u start making the muffin batter. IT may seem abit much but divide the crumble equally among the 12 muffins!
