It's Wednesday and I have some cookies and cheesecake!









Baked cheese cake and gluten free vanilla shortbread cookies.

Gluten Free Vanilla Shortbread Cookies

Recipe Adapted from here


150g Butter 
1/2 cup icing sugar
1 teaspoon pure vanilla extract
pinch salt
1 1/4 cups superfine brown rice flour (infinity foods)
1/4 cup cornstarch


Beat butter and Icing sugar until soft and fluffy.
Add vanilla extract.
Add all dry ingredients all at once and beat until combined.


I used a small star nozzle to pipe cookies on trays.


Bake at 170c for about 12-15 minutes.

That cheesecake looks heavenly! I've tried baking cheesecakes twice and have never been completely successful, yours looks delicious!
